Chickpeas have become something of a hit in the past few years – they are ever so cheap to buy (you can get a 400g tin for as little as 35p!), easy to cook with & super high in protein. You can make a chickpea curry, a chickpea hummus or the easiest (& I think the tastiest!) way of making chickpeas is roasting them! There are no limits to your imagination when it comes to flavours of roasted chickpeas – for your inspiration I’ve put together three of my favourite recipes: one that’s sweet, one that’s salty & one that’s super spicy!
I love nibbling on them when I’m feeling a little peckish – the salty garlic chickpeas work well when you’re trying to get yourself off crisps. But who can resist the taste of Peri Peri? Perhaps that’s one to try when you’re combating your Nandos addiction. The sugar & honey chickpeas are great in the morning to give you a bit of an energy kick (instead of a chocolate bar) or in the evening when you’re about to demolish the fridge! Crispy roasted chickpeas: sweet, salty & spicy
- 400 g chickpeas
- 3 tsp mixed spice
- 2 tbsp honey
- 2 tbsp sugar
- 1 tbsp salt
- 2 cloves garlic
- 2 tbsp Peri Peri spice
Drain your chickpeas and spread across a clean tea towel. Pat dry with a paper towel if needed.
Place chickpeas in a bowl and add ingredients of choice.
Spread evenly on a roasting tray. Roast in a preheated oven (200°C) for 30-40 minutes.
Take out of the over and leave to cool down – this is when the chickpeas get truly crispy!
