
If there’s one thing Czech people are good at then it’s baking Christmas cookies. We are obsessed. No word of a lie most people probably make about 20 different kinds of cookies and start baking at the end of November. And if you’re crap at baking then you hire a professional baker extraordinaire (your mate’s nan) to bake it for you. FACT. Anything from vanilla rolls to bee hives and Linzer cookies. And gingerbread cookies! Obviously.

Gingerbread cookies with royal icing
Especially delicious when served with a cuppa!
Ingredients
Gingerbread
- 750 g plain flour
- 200 g caster sugar
- 1 cup honey
- 150 g unsalted butter
- 3 eggs
- 3 tbsp cocoa
- 1 tbsp gingerbread spice
- 1 tsp ground cinnamon
- 2 tsp bicarbonate soda
Icing
- 1/2 cup lemon juice
- 1/2 cup icing sugar
- 2 egg whites
Instructions
Gingerbread
Mix all ingredients into a dough and leave to rest in the fridge overnight.
Knead the dough a little more. Cut out shapes.
Bake in a preheated oven (180) until brown (ca 7 minutes).
Icing
Mix all ingredients until thick.
Use a rolled up sheet of paper or a plastic bag with a cut off corner to decorate! (who needs actual baking utensils, right?)
