If there was one alcoholic drink I could drink forever then it would be Bayleys. Perhaps I could alternate between a coffee liquor and a really cheap apple Schnapps because I’m a lady like that. But Bayleys (unlike the apple Schnapps) is pretty expensive in Prague, that’s why I’d looked up a recipe for a homemade version. Which I made this weekend. And it’s bloody delicious! Would you like to know how to make possibly the best Bayleys coffee liquor knock off in the world?
Now, before we get onto the recipe I need to mention one thing. You need a good quality coffee. It definitely can’t be an instant coffee, urgh, that would be just rank. Use a high-quality coffee, such as this ground coffee from The Coffee Mate. They’re your ultimate online destination for affordable yet excellent quality coffee. This particular one cost a little less than £5 for 250g which I think is a brilliant value. It has a slight tinge of chocolate to it which is absolutely perfect for this recipe. You can also play with various flavours of condensed milk – I’ve seen they now make it in a walnut flavour as well as chocolate flavour.

Homemade coffee liquor
A delicious homemade alternative to Bayleys
Ingredients
- 100 ml water
- 6 tsp good quality coffee
- 1 tin condensed milk
- 50 ml cream
- 100 ml dark rum
Instructions
Make a cup of very strong coffee - use 100ml of water and 6 full heaps of coffee. Make it as strong as possible! Wait until it cools down.
Once the coffee is at least lukewarm (I know how hard it is to wait for this heavenly deliciousness to be ready!), add the rest of the ingredients. Mix well.
Pour into a bottle & keep in the fridge. It probably won't last that long but you can keep it in the fridge for as long as a month.
